Updates the SE050 simulator CI workflow to use the new wolfSSL/simulators repository layout instead of the previous private repo, ensuring the SE050 simulator-based tests still run against the PR’s wolfSSL sources.

- Switches the CI clone source from
LinuxJedi/SE050SimtowolfSSL/simulatorsand pins a new commit ref. - Updates paths/working directories to use the
SE050Sim/subdirectory within the simulators repo. - Adjusts Docker build context/file locations accordingly.
