Update diff-use org references for the prism-science rename

The GitHub org diff-use is being renamed to prism-science on Aug 26. GitHub redirects git and web links, but docs should point at the new org name directly.

Changes:

• README.md: dev-branch fork links and developer-install clone URL updated from diff-use to prism-science.
• examples/insulin-tutorial/README.md: raw.githubusercontent.com env.yaml URL and pip git install URL updated.

All changes are github.com and raw.githubusercontent.com URLs that GitHub redirects after the rename, so they are cosmetic and safe to merge any time, before or after Aug 26.
