Move site analytics to PostHog - #57

Pageviews, pageleaves and autocapture go to the PostHog project "penciled" through an /ingest reverse proxy (vercel.json rewrites, and the Vite dev proxy locally), with product: "penciled" on every event. Named events cover the main calls to action: extension store links, GitHub, npm, install commands copied, docs CTAs, StackBlitz and the first highlight in the landing demo. Session recording stays off. Removes @vercel/analytics and its <Analytics /> components.

Replaces the previous site analytics with PostHog (posthog-js, /ingest reverse proxy, product super property, key CTA events). See docs/analytics.md. Approved by Marcel.
