Onboarding: complete k0s .project setup

Follow-up to k0sproject/.project#2 (merged).

Status:

.project PR merged: Update CODEOWNERS and maintainers.yaml match repo maintainers list k0sproject/.project#2
Missing maintainer handle found and added: apedriza (Alexander Pedriza) was in maintainers.yaml but missing from cncf/foundation's project-maintainers.csv — added via Add missing maintainer apedriza to k0s foundation#1521 (merged)
CI fixed on k0sproject/.project main: project.yaml used the deprecated cncf_slack_channel field (removed from schema); replaced with slack_channels. Stale cncf/automation action SHA pins bumped. Both Validate Project Metadata and Update Landscape workflows now pass on main.

Outstanding TODOs in project.yaml needing verification:

project_lead: emosbaugh — auto-detected, needs confirmation from the project
slack_channels — #k0s-dev set as primary; #forest was also auto-detected as a possible channel and needs verification
maturity_log sandbox issue link (cncf/sandbox#333) — auto-detected, needs verification
Stray top-of-file comment # TODO: Set identity_type under legal (has_dco, has_cla) — the identity_type block below it already appears to be filled in (has_dco: true, has_cla: false); needs confirmation these values are correct and the leftover TODO comment removed
