Swift OpenAPI Runtime depends on swift-nio shared workflows. Swift-nio has reverted the default value for Swift 6.1 runs, but Swift OpenAPI Runtime has already adopted Swift 6.2 as minimum toolchain. We need to explicitly disable 6.1 now.

Are you sure this is necessary. I think the meta workflow to construct the matrix now takes into account swift-tools-version in the manifest. If you open an empty PR to this repo, I expect that it no longer generates a Swift 6.1 job so no change here should be needed.

Ah. Xcode tests. Fair enough. I guess the version-dependent matrix generation isn't for the macOS stuff?
